Appelflappen
(Dutch Apple Fritters)
Growing up, my family had the tradition of having Dutch Appelflap on New Year’s Day. They are absolutely delicious.
Ingredients:
2 cups all-purpose flour
½ teaspoon salt
12 oz. cold beer (not dark)
1/2 cup soft brown sugar
4 tablespoons clear honey
2 tablespoons concentrated lemon juice
1 cup water
10 cups vegetable oil
5 – 6 granny smith apples
In a saucepan mix the brown sugar, honey, and water. Bring to a boil and boil for 5 minutes. Remove from heat and stir in the lemon juice.
Peel and core the apples. Cut into 1/3 inch thick rings. Drop apples rings into the syrup and carefully stir to coat them thoroughly. Set aside for 1 hour.
Stir together flour, granulate sugar, and salt, then add beer and whisk to combine. (Should look like pancake batter)
Heat oil in a heavy 5-quart pot or deep fryer until thermometer registers 375 degrees.
Dip apples slices in batter, shake off excess, and fry 8 at a time, until golden, about 1 ½ minutes on each side. Remove with a slotted spoon and place on a paper towel to drain. Serve warm, dusted with confectioners’ sugar.
